Duca d’Aosta Restaurant featured at Miss Venice Beach 2026

On July 26, during the Bibione leg of the Miss Venice Beach talent show, the Duca d’Aosta RestaurantSavoy Beach Hotel & Thermal SPA took center stage to kick off the evening with a special cooking show.

On stage in Piazza Fontana, chefs Stefano Prodolutti and Cristiano Catto represented the restaurant’s kitchen team, presenting the dish “Carpaccio Mari e Monti” to the audience—a creation that embodies the restaurant’s culinary philosophy: showcasing the local region through high-quality ingredients, contemporary techniques, and a cuisine committed to sustainability.

The event, which was also filmed for the TV show and aired on La7, represents an important promotional opportunity for Bibione and for the region’s culinary and wine excellence.

A dish that showcases Italy’s regional flavors

The “Carpaccio Mari e Monti” is the result of combining carefully selected ingredients from local farms with a culinary approach that aims to highlight the best qualities of each ingredient.

The star of the dish is the Piedmontese Fassona beef carpaccio, accompanied by the delicate flavor of Casatella cheese from Latteria di Soligo and the savory notes of clams supplied by iPescaOri in Caorle.

Rounding out the dish is a sauce made from the liquid naturally released by the clams during cooking, enriched with vanilla and coconut, as well as citrus zest and pea shoots.

A recipe that perfectly unites land and sea, tradition and culinary innovation.

The Zero-Waste Philosophy of Ristorante Duca d’Aosta

The dish presented during Miss Venice Beach fully reflects the philosophy of Ristorante Duca d’Aosta, where sustainability is an integral part of daily kitchen operations.

Every ingredient is utilized in its entirety, minimizing waste and transforming elements that would normally be discarded into new opportunities for flavor.

The clam broth, recovered and used as the base for the sauce, is a concrete example of this approach: a choice driven not only by the desire to reduce waste but also by the pursuit of new flavor balances.

A restaurant that takes Bibione further than its cuisine

Its participation in Miss Venice Beach reaffirms the Duca d’Aosta Restaurant’s status as one of Bibione’s leading culinary destinations, capable of promoting signature cuisine rooted in the local area through events and external collaborations.

Each event offers an opportunity to showcase the region through gastronomy, placing products, people, and culinary culture at the center.

Those who wish to experience this philosophy can do so every day at Ristorante Duca d’Aosta, where research, seasonality, and respect for ingredients come together to create a gastronomic experience that tells the story of the region in every dish.
